They don't have a specific gluten-free menu at this point in time, but suspect one might be coming. There are many options available, you need to ask your server. The server we had was very knowledgeable and very helpful. She answered my questions about food, preparation and cross contamination.
Their food is made fresh to order.
Lunch: Any sandwiches can be had substituting GF bread. Any of the pasta sauces are GF except for the meatballs (bread crumbs). They do have gluten-free pasta available (cooked in fresh water, not the normal pasta water).
They have GF desserts!

Outback Steakhouse is owned by OSI Restaurant Partners. Most, if not all of the OSI restaurants have gluten-free menus. Sadly, there's not many of their restaurants are not located near Ripon.
Each Outback is independently owned, so you may find variable levels of Celiac/Gluten-free knowledge at each Outback. Each location is required to have training in handling allergen orders, however some wait-staff is better than others. Outback is in enrolled in The Gluten-Free Restaurant Awareness Program. GFCO builds training manuals, reviews menus, etc in order to make dining out as safe as possible*.
The Grand Chute location is generally quite knowledgeable about their GF offerings.
Fox Valley Celiacs (CSA #26) has a list of Appleton & Green Bay Area gluten-free friendly restaurants.

Notice: We dined here in mid October 2009. We found out that LeeAnn is not currently working there. She was the go-to person for their GF knowledge. Now that she is not working there, I'm not sure of the knowledge level of the remaining staff.
Silvercryst does have a gluten-free menu, you just ask for it when you get seated. LeeAnn, one of the waitresses has worked with the owners, kitchen & wait-staff do develop their GF menu and to be mindful of cross contamination issues. LeeAnn's husband has Celiac Disease and is very knowledgeable. You can request her as your waitress.

Bunky's have extensive GF options. There are only 2 or 3 menu items that can not be made GF. In April 2009, they moved to a new location that allows them to have a GF kitchen!

A recent article in the Oshkosh Northwestern says the owners of The Bar are branching out into a more "family-friendly" environment. [The Bar is known to be very GF friendly].
“We’re definitely a little more family-friendly, on a different level than how The Bar operates,” Miller said. “They’re more casual, and probably demographically-speaking, skew younger – you know, a Friday night targeted to happy hour. And though The Bar serves a lot of food, it’s not to the extent that we do here. We offer items that you’re not going to see there, say Saturday’s prime rib, our broasted chicken everyday. Our breakfasts on Saturday and Sunday have also become really popular.”
...though most notable is Graystone’s dedication to offering most items as gluten-free.“The demand has been there,” Miller said. “It’s something we’ve really worked hard on, to make the menu accessible to everyone who wants to eat here, to educate our staff about it.”

Milwaukee has a lot of great GF dining options. Sadly, I've only had a chance to visit a few of them as of this update (Saz's, Stack'd Burger, Jalapeno Loco - Mequon).

J.Loco's has one of the most detailed menus when it comes to allergens! All sorts of ingredients are broken out on their menu.
The owner was at the Mequon location the night we were there. She helped me go thru the menu.
Get the Guac! They will make you fresh GF tortillas (fried in clean oil).
Be aware, the guac normally comes in a fried tortilla bowl - make sure they put it on a plate.

I have been here twice. Their GF menu is not extensive, but it covers all the bases. Honestly, I've never gotten past the rack of ribs!
Our chefs are taking every precaution to prepare our Gluten Free menu items so that we minimize cross contact, but our kitchen is not entirely free of products that do contain gluten, so we ask that you follow your own guidelines in ordering.
All Gluten Free menu items are prepared separately, not in combination with foods containing gluten.
